Mango Macadamia Cheesecake Recipe

With summer in full swing, we simply cannot resist a little sweet something to share with friends and family.

Make our no-bake mango cheesecake! It’s easy, fresh, and the perfect summer table centerpiece to impress your loved ones.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

You'll need:

1 ½ cups mango pulp

2 tbsp lemon juice

1 tub of white chocolate macadamia nut butter

1 ½ cups of biscuits of choice (we used digestives)

1 cup cream

10 ½ oz cream cheese

1 tsp gelatin

¼ cup water

2 tbsp unsalted butter

 

Instructions:

Crush the biscuits into crumbs. Pour into a bowl and add the melted butter. Mix well and pour into a 7-inch pan. Press the crumbs into the base. Place in the fridge to chill.

In a bowl, add the cream cheese and whisk until fluffy. Add the cream and mix until the mixture becomes a bit thicker. Do not over-mix to prevent the cream from splitting.

Add the mango pulp, lemon juice, and swirls of macadamia nut butter here and there.

In a separate bowl, add the water and powdered gelatin. Let it bloom for 5 minutes, then stir until the gelatin has dissolved. Add it to the cheesecake mixture.

Pour the mixture into the chilled base. Spoon a thin layer of the white chocolate macadamia nut butter on top.

Leave to chill for 4 hours before serving. Enjoy sharing it with your loved ones and see if you can resist eating the entire thing in one sitting... we couldn't help ourselves!
